Chocolate Cookie Dough Bites

Gluten-Free ~ Vegan ~ No-bake

Whoever said making a dessert required lots of ingredients and too much time obviously had never tried these beauties. Just 4 ingredients and less than 30 minutes are all it takes to make these adorable and delicious mini cookie dough bites!! Being able to just pull these out of the freezer and pop a couple in our mouth after a long and busy day truly is such a life saver. Don’t get us wrong, we love making extravagant desserts BUT sometimes we want something simple and easy and that doesn’t require us to go to the store and buy a bunch of ingredients. This recipe uses pantry staples that you likely already have at home. So if you have some extra time on your hands this week, we highly recommend you give this recipe a go!

Ingredients:

  • ½ cup peanut butter (or nut/seed butter of choice)
  • 2 tbsp maple syrup (or honey)
  • ¼ cup almond flour
  • 1 dark chocolate bar melted (vegan if desired)

Method:

  1. Mix the nut butter, maple syrup, and almond flour together and roll the dough into small balls with your hands.
  2. Place in the freezer for at least 15 minutes or until firm.
  3. Melt the chocolate in 30 seconds intervals in the microwave.
  4. Coat the cookie dough balls in the chocolate mixture. Use any extra melted chocolate to drizzle over the bites.
  5. Place in the freezer to let the chocolate set (~ 5 minutes).
  6. Store bites in the fridge or freezer.
