3 Ingredient Almond Thumbprint Cookies

These are the EASIEST, and chewiest cookies ever! This recipe is for the plain cookie itself, but you can fill the cookie with anything you like. Some ideas include berry compote, jam, Nutella, nut/seed butter, etc. This recipe is also great for kids, because they can experiment with different toppings that they enjoy!

Gluten Free Almond Thumbprint Cookies

Ingredients:

  • 1 large egg white
  • 2 tbsp sugar
  • 1 cup almond flour

Recipe:

  1. Preheat oven to 350F.
  2. In a medium bowl, beat the egg white on medium speed. Once they become frothy, add the sugar and beat until soft peaks form.
  3. Add the almond flour and combine.
  4. Scoop 1 tbsp of dough and roll into a ball. Use your thumb and press down the centre to take a thumbprint indent.
  5. Bake for 10 minutes or until golden brown.
  6. Fill the cookie with your desired fillings and enjoy!
