4 Ingredient Cookies
Yes, you read right – only 4 ingredients!!! You will need more ingredients if you choose to add different flavours (chocolate chips, pecans, dates, etc.), but the base only requires 4 simple ingredients! We experimented with this recipe a lot, and we like it best with chocolate chips and chopped walnuts. You also don’t necessarily need the olive oil, but it makes them more moist & you add in some healthy fats 🙂
Ingredients:
2 large ripe bananas, mashed or pureed
2 cups quick oats
1/4 cup olive oil
1 tsp Vanilla
Optional:
1/2 cup chocolate Chips
1/2 cup chopped walnuts or pecans
1/2 cup chopped dates or raisins
and/or
1/4 cup dried shredded coconut
(TIP: you may need to add an extra mashed banana, or 1/4 cup of milk, depending on how many “Optional” dry ingredients you add and how dry your cookie batter looks)
Instructions:
- Preheat oven to 350 degrees F.
- In large bowl combined mashed banana, oats, oil, and vanilla until smooth. Add in whichever Optional Ingredients you like (plus extra banana or milk, see tip above).
- Spray baking sheet with nonstick spray. Drop dough by large tablespoons onto cookie sheet; flatten a bit with a rubber spatula. Bake for 9-12 minutes, or until cookies are set. Remove from oven and cool on wire rack. Cookies will keep in a covered container for a few days, or they can be frozen and reheated. Enjoy!
