4 Ingredient Cookies

Yes, you read right – only 4 ingredients!!! You will need more ingredients if you choose to add different flavours (chocolate chips, pecans, dates, etc.), but the base only requires 4 simple ingredients! We experimented with this recipe a lot, and we like it best with chocolate chips and chopped walnuts. You also don’t necessarily need the olive oil, but it makes them more moist & you add in some healthy fats 🙂

Ingredients:

2 large ripe bananas, mashed or pureed

2 cups quick oats

1/4 cup olive oil

1 tsp Vanilla

Optional:

1/2 cup chocolate Chips

1/2 cup chopped walnuts or pecans

1/2 cup chopped dates or raisins

and/or

1/4 cup dried shredded coconut

(TIP: you may need to add an extra mashed banana, or 1/4 cup of milk, depending on how many “Optional” dry ingredients you add and how dry your cookie batter looks)

Instructions:

  1. Preheat oven to 350 degrees F.
  2. In large bowl combined mashed banana, oats, oil, and vanilla until smooth. Add in whichever Optional Ingredients you like (plus extra banana or milk, see tip above).
  3. Spray baking sheet with nonstick spray. Drop dough by large tablespoons onto cookie sheet; flatten a bit with a rubber spatula. Bake for 9-12 minutes, or until cookies are set. Remove from oven and cool on wire rack. Cookies will keep in a covered container for a few days, or they can be frozen and reheated. Enjoy!
