No-Bake Chocolate Cranberry Bars

Looking for a new easy, tasty and healthy snack? These no-bake bars are the perfect recipe to whip up when you don’t have a lot of time but are wanting to make a snack to enjoy throughout the work/school week. These bars are great because you can easily substitute the ingredients for what you have in your pantry already like different nuts and seeds or dried fruit! If you aren’t a chocolate fan then you could try yogurt chips and if you are looking for something on the saltier side then broken-up pretzels would also be an amazing addition. We can’t wait to make these again and try out a new combo!

Ingredients:

  • 1.5 cups oats
  • ⅓ cup hemp hearts
  • ⅓ cup almonds, roughly chopped
  • ¼ cup chocolate chunks or chips
  • ¼ cup dried cranberries
  • ¾ cup peanut butter
  • ⅓ cup honey or maple syrup

Method:

  1. In a large bowl, mix the dry ingredients together.
  2. Add the wet ingredients to the dry and mix until combined.
  3. To a lined loaf pan, press down the mixture firmly with a spoon or spatula. The more you press it down the better it will hold together when cutting it into bars
  4. Place in the fridge for at least 1 hour. Slice into pieces.
  5. Store in the fridge in an air-tight container.
