8 Ingredient Banana-Oat-Chocolate Cookies

Back-to-school season is here and we know how crazy busy life can get in September! A busy schedule can make cooking at home seem like an impossible task, that’s why we love sharing recipes like this one that are quick, easy and use minimal ingredients. These cookies are the perfect sweet treat to pack on the go for lunches, plus you could double the recipe and freeze half the batch for later. All you need is 8 ingredients to make these delicious banana oat choc cookies!! If you have a bunch of bananas that are too ripe and you don’t know what to do with them then this is the perfect recipe to test out this weekend. We used plain greek yogurt in our cookies but if you don’t have this in your fridge then an easy substitute is apple sauce! Using apple sauce is also an easy way to make these cookies vegan if desired (also be sure to use dairy-free chocolate chips).

Ingredients:

  • 3 ripe bananas
  • ⅓ cup plain greek yogurt (or sub apple sauce)
  • ¼ cup milk of choice
  • 1 tsp vanilla extract
  • optional: 1-2 tbsp maple syrup (depending on how ripe bananas are/desired sweetness)
  • 2 cups rolled oats
  • 1 tsp cinnamon
  • ½ cup chocolate chips

Method:

  1. In a large bowl, mash the bananas. Then add the yogurt, milk, and vanilla extract and combine.
  2. Taste the batter and if you desire more sweetness add 1-2 tbsp maple syrup.
  3. Add the oats, cinnamon, and chocolate chips and combine until thoroughly mixed.
  4. Use a cookie scoop or spoon to divide cookies onto a lined baking sheet. Bake for 18 mins at 350F.
  5. Let the cookies cool slightly and then transfer them to a wire baking rack to let them cool completely.
  6. Store in an air-tight container in the fridge.
