Fluffy Chocolate Chip Cookies
We love sharing fun and exciting recipes that use cool ingredients you might not always cook with BUT we also love keeping things super simple sometimes because we know not everyone loves grocery shopping and/or baking as much as we do. That’s why we wanted to share this simple but tasty chocolate chip cookie recipe because it uses ingredients you probably already have in your pantry or that you can make simple substitutions for if needed. For instance, if you don’t have coconut oil you can substitute it for another neutral-tasting oil, and if you don’t have almond flour, then you can substitute it for oat flour (which can be made by simply blending up oats in a food processor or blender)!
The reason we love these cookies so much is because of how FLUFFY they are! Although we love a good crispy cookie, there is something about a fluffy and light cookie that is totally underrated! Another reason why we love this recipe so much is that we used a chocolate bar roughly cut up into chunks, that way each cookie had a delicious mix of large and small pieces of chocolatey goodness. To elevate this cookie, we recommend getting a flavoured chocolate bar like a fruit and nut chocolate bar, or salted caramel chocolate bar and using that in the recipe to add another layer of flavour!
Ingredients:
- 1 egg
- ¼ cup maple syrup or honey
- ¼ cup coconut oil, melted
- ⅓ cup nut butter of choice
- 1 tsp vanilla extract
- 2 cups almond flour
- ¼ tsp baking soda
- ¼ tsp salt
- 1 tsp cinnamon
- 1 dark chocolate bar chopped (or ½ cup dark chocolate chips)
Method:
- In a large bowl, whisk the egg and then mix in all of the wet ingredients.
- Add all of the dry ingredients (except for the chocolate) and mix until combined.
- Fold in the chocolate and scoop cookies onto a lined baking sheet.
- Bake for ~15 mins at 325 F.
- Place cookies on a rack to cool and store in an airtight container on the counter.
