Peanut Butter Chocolate Fudge Bars
These peanut butter oat fudge bars are so delicious and a perfect dessert for any night of the week. They’re one of my favourite desserts, but I got tired of paying four dollars for an oat fudge bar from a cafe, and was unable to find a recipe to make at home that I liked. So I decided to make my own recipe. What’s great about this recipe is that it’s vegan and can be customized by adding nuts or raisins to the fudge to add some texture. I also like to add flakey sea salt on top to bring out the chocolatey flavour!
I love this recipe because not only is it delicious, it’s full of nutrients such as healthy fats, protein, potassium and vitamin B6. These bars are perfect to eat with a cup of coffee for an afternoon snack or as a dessert after dinner. The oats and the peanut butter help to fill you up if you choose to eat it as a small snack and the chocolatey taste is perfect to satisfy your sweet tooth for a yummy dessert. Whatever you add to the fudge or whatever time of day you choose to eat these fudge bars, I know you will become a huge fan just like I am and they will definitely become a baking staple. In the recipe, I chose to toast the crust to add a bit of extra flavour and crunch, however, if you want this to be a raw vegan dessert, simply press the base into the pan and place it in the freezer while you make the fudge. Although I prefer to slightly toast the base, this is still a delicious option.
Let’s get into the recipe. Here is what you’ll need
Ingredients:
Base:
- 1 ½ cups of oats
- 2 tablespoons of melting coconut oil
- ½ cup of shredded coconut
- 3 dates, pitted
- 1 tablespoon maple syrup
Fudge:
- 1 cup peanut butter
- 1 medium-sized banana
- ⅓ cup cocoa powder
- 2 teaspoons of maple syrup
- 1 tablespoon of water
- ½ teaspoon vanilla
- 1/4 teaspoon salt
Recipe:
- Preheat oven to 350 degrees Fahrenheit
- Add oats, coconut oil, coconut, dates and syrup to a food processor and process until ingredients start to stick together.
- Line a square baking dish with parchment paper and press the base evenly into the pan.
- Place base in the oven for 10-15 minutes or until the oats are slightly golden. Let cool completely.
- Add all ingredients for the fudge in the food processor and process until well combined and smooth.
- Spread fudge evenly over the base and flatten to ensure it’s secure.
- Enjoy! Store in the fridge for up to a week.
