Morning Muffins: Carrots, Apples, & Oats

Is your go-to breakfast a coffee and pastry from your favorite coffee shop? Save your money and cut down on the excess fat and sugar often found in coffee shop baked items by making a healthier homemade morning muffin!

While muffins can be high in added sugars and fat, this recipe uses skim milk and is a great source of fibre from the rolled oats, carrots, and apples. Pair these muffins with a homemade latte and you’ll have a healthy, filling breakfast on the go!

The recipe is also easy, quick, and with minimal clean-up. With a final hint of cinnamon sweetness, the kitchen will smell like your local coffee shop!

Baker’s tip: for light, airy muffins, mix just until no lumps are there. Do not beat or over mix.
