Avo-Tuna Salad Sandwich

We have been loving sharing our quick and easy lunch recipes recently and we are back with another! This open-faced avo-tuna salad sandwich only takes 5 minutes to make and is packed with PROTEIN & HEALTHY FATS so it will keep you feeling full while at work or school. This is our play on the classic tuna salad sandwich because rather than using mayo, we decided to substitute it with avocado to increase the healthy fats and to improve the satiety factor.

Canned tuna is such an underrated ingredient! We love it because it’s an inexpensive, convenient and nutrient-packed protein option. We always find that lunch can be a tricky meal when we are in a rush and just want something simple and quick. That’s why we love adding a can of tuna to our sandwiches or salads!

Ingredients:

  • 1 can of flaked tuna, drained
  • ½ an avocado, mashed
  • ¼ cup diced red onion
  • juice from ½ a lime or lemon
  • 2 tbsp chopped parsley
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp paprika
  • ¼ tsp garlic powder
  • drizzle of sriracha (or hot sauce of choice)
  • 2 slices of whole-grain bread

Method:

  1. Place your bread in the toaster.
  2. In a small bowl, combine all the ingredients.
  3. Top your pieces of toast with the avo-tuna salad and add a drizzle of hot sauce.
