Blueberry Banana Oat Bread

September is fast approaching and so is the need for nut-free school lunches and snacks! Here is a nut-free, school-friendly recipe for Blueberry Banana Oat Bread! Pair this with some cheese, hard boiled egg, or nut-free seed butter for a delicious, filling recess snack!
Ingredients:
- 1 1/4 cup rolled oats
- 1 1/4 cup light spelt flour
- 1/3 cup coconut sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- pinch of salt
- 2-3 ripe bananas
- 1/4 cup milk of choice
- 1/4 cup applesauce
- 1 tsp vanilla extract
- 1 cup blueberries
Recipe:
- Preheat oven to 350 F/180 C.
- In a large mixing bowl, combine dry ingredients (rolled oats, spelt flour, coconut sugar, baking powder, baking soda, cinnamon, salt).
- In a medium mixing bowl, mash bananas with wet ingredients (milk of choice, applesauce, vanilla extract).
- Add wet ingredients to dry ingredients, mix until just combined.
- Fold in blueberries.
- Pour the batter into a parchment paper-lined loaf pan.
- Bake for 50-55 minutes, or until done.
