Caprese Sandwich

Some days we just don’t have the time or energy to make an extravagant lunch! A sandwich is our best friend on those kinds of days because it is easy, quick and always hits the spot. This Caprese sandwich is one of our go-to combos! It is inspired by one of our favourite dishes, Caprese salad which uses mozzarella, tomatoes and basil. One of the most important components of making a tasty sandwich is the bread! If you can get your hands on some fresh bread then we highly recommend you do and we also always make sure to use toast ours for that extra crunch.

Ingredients:

  • 2 slices of fresh bread
  • 1 large spoonful of hummus
  • 2 slices of tomato
  • 2 fresh basil leaves
  • 2 slices of mozzarella
  • 1 jarred roasted bell pepper sliced in half
  • 3 pieces of salami
  • Small handful of arugula
  • Drizzle of balsamic glaze

Method:

  1. Toast the bread.
  2. Spread hummus on both pieces of bread.
  3. Add the sliced tomato, basil, mozzarella, red pepper, salami, arugula and balsamic glaze.
