Chickpea Salad Sandwich
Tired of having the same old sandwich for lunch? Wanting to incorporate more plant-based proteins in your diet but don’t know how? Mix it up with this chickpea salad sandwich! This vegetarian sandwich is a great source of plant-based protein and fibre!
Ingredients:
- 2 slices whole grain bread
- 2 kale leaves,
- 2 slices of heirloom tomato
- 1 pickle, sliced (optional)
Chickpea Salad:
- ¼ cup canned chickpeas (rinsed & drained)
- 1 tbsp vegan mayonnaise
- 1 tsp dijon mustard
- ¼ tsp garlic powder
- 1 tbsp chopped red onion
- 3 red grapes, diced
- 1 tbsp fresh dill, chopped
- Salt & Pepper
Recipe:
- Toast 2 slices of bread
- In a small mixing bowl, combine chickpeas, vegan mayo, dijon mustard, garlic powder, red onion, grapes, fresh dill, and salt and pepper to taste. Mash and mix well with a fork until well combined.
- Spread chickpea mix onto one slice of bread. Top with kale leaves, sliced tomato, and pickle. Enjoy!
