Chocolate Chip Banana Pancakes
The weather here in Vancouver has been rain, rain and more rain, and so it has also been super muggy and humid. As a result, our bananas have been ripening in the blink of an eye! Luckily we have this delicious pancake recipe that we can make to use up all of our ripe bananas. Pancakes for breakfast every day this week? We think YES! And of course, these pancakes are loaded with chocolate chips because they make them 100x tastier. If you aren’t a chocolate lover though, you could sub the chocolate for blueberries or just enjoy your pancakes plain!
Makes 2 Servings
Ingredients:
- 1 ripe banana
- 1 egg
- ¾ cup milk of choice
- 1 tbsp maple syrup + more for topping
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 2 tsp baking powder
- ¼ cup chocolate chips
- Butter for cooking
- Fresh or frozen berries
Method:
- In a large bowl, mash the banana until smooth. Mix in the egg, milk, maple syrup and vanilla extract.
- Add the flour and baking powder and mix until just combined.
- Fold in the chocolate chips.
- Cook the pancakes over medium-low heat on a skillet greased with butter.
- Top the pancakes with fresh berries (if using frozen, microwave for 1 minute) and maple syrup.
