Creamy Tomato Soup

This fresh tomato soup is cozy, creamy, comforting and most importantly, soooo EASY to make. Making homemade soup was always a task that seemed daunting to us. Would we need an overwhelming amount of ingredients? Would we have to stand over the stove for hours on end? Would the soup end up tasting bland? Well, we are here to tell you that none of our fears are true when it comes to making this creamy tomato soup! This recipe requires only 10 ingredients, around 30 minutes of your time and bland is not in this soup’s vocabulary.

This soup is flavourful enough to stand on its own and be delicious BUT to make this into a more balanced meal that will keep you feeling satisfied, we recommend serving this tomato soup with a classic grilled cheese sandwich. Tomato soup + grilled cheese, name a better combo…we’ll wait! If you’re not a grilled cheese fan no worries, we recommend pairing this soup with a grilled tuna melt or BLT. Long story short, this soup is so tasty that you can’t go wrong with your sandwich pairing!

Ingredients:

  • ¼ cup olive oil
  • 1 small yellow onion, chopped
  • 1 head garlic, sliced in half
  • ~600g cherry tomatoes
  • Fresh thyme + basil (to your liking, we added 10-15 sprigs of thyme and 1/3 cup tightly packed basil leaves)
  • Generous sprinkle of salt + pepper
  • ½ cup coconut cream
  • ⅔ cup veggie stock (more or less depending on desired consistency)

Method:

  1. To a large baking dish, add oil, onion, garlic, tomatoes, thyme, basil, and salt + pepper.
  2. Mix everything and bake at 475 F for 25-30 mins.
  3. Remove from the oven and everything to a blender. Be sure to squeeze the roasted garlic out of the peel before adding it to the blender!
  4. Add coconut cream and veggie stock and blend until smooth.
  5. Top with more thyme, basil and a drizzle of olive oil.
  6. Optional but highly recommended: serve with a grilled cheese sandwich!
