Healthy PB & Banana Baked Oats

Have you tried baked oats yet?! This recipe is just as moist and fluffy as cake, but with added fiber and protein!

We usually recommend choosing a breakfast that includes a carbohydrate, protein, and fat so that you are adequately fueled for your next meal or snack, AND you’re packing in all those nutrients you need. This recipe is perfectly balanced, so all you need to do is bake and eat!!

Peanut Butter & Banana Baked Oatmeal

Ingredients:

  • 1 cup large flake oats
  • 2 tbsp of ground flaxseeds
  • 2 tsp baking powder
  • 2 tbsp chocolate chips
  • 1 banana
  • 2 eggs
  • 2 tbsp maple syrup
  • 1/4 cup natural peanut butter
  • 1/4 tsp of salt

Instructions: 1. Preheat oven to 350F.

2. In a blender, pulse the oats, flaxseeds, baking powder and chocolate chips for 10 seconds.

3. Then add the banana, egg, maple syrup and peanut butter and blend until smooth.

4. Pour the batter into 1 small loaf pan or 2 ramekins and bake for 20 minutes. Let cool, then store in an airtight container for 3-4 days. Enjoy!
