Honey Spiced Chicken with Kale Salad

Sugar and spice, and everything nice; that is what this easy roasted chicken is made of. This meal is very simple and easy to prepare. Just marinate and bake the chicken with the recommended spices and prepare the kale salad while it bakes. In less than 30 minutes, you can enjoy a delicious meal!

Ingredients:

Honey Spiced Chicken

Honey Spiced Chicken with Kale Salad
  • 2 chicken thighs, bone and skin on (boneless and skinless works too)
  • 1 tbsp oil
  • 1/4 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp Italian seasoning
  • 1/8 tsp mustard powder
  • 1/8 tsp cayenne pepper
  • 2-3 tbsp honey

Kale Salad

  • 2 whole kale leaves
  • 2-3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp dijon mustard
  • 1 garlic clove, minced
  • pinch of pepper
  • 1/4 cup walnuts
  • 1 tbsp parmesan or feta

Instructions:

For the chicken

  1. Rub the chicken thighs with salt. Let it marinate in the fridge for 15 minutes.
  2. Meanwhile, combine all the spices.
  3. After the chicken has rested, rub the chicken with oil then sprinkle on the spices.
  4. Bake at 425F for 20 minutes. Pour the honey over the chicken thighs and bake for another 5-10 minutes or until cooked through.

For the kale salad

  1. Mix together the balsamic vinegar, honey, dijon mustard, garlic and pepper.
  2. Prepare the kale by chopping it into bite sized pieces.
  3. Massage the dressing into the kale (the key to a tender kale salad!)
  4. Top it off with walnuts and parmesan.
