No-Bake ~ Vegan ~ GF Chocolate Banana Bread Bites

BANANA BREAD! It’s one of our favourite baked goods to make at home! We certainly have more than enough banana bread inspired recipes on our blog BUT why not add another? These Chocolate Banana Bread Bites are a great snack or dessert to make when you’re craving banana bread but not in the mood to do a bunch of baking. This NO BAKE recipe requires only 7 ingredients and can be whipped up in under 30 minutes!

Ingredients:

  • ½ cup pitted dates
  • 1-2 cups boiling water to soak dates (*save 3 tbsp of the date soaking water when you drain the dates)
  • 1 cup oat flour (certified GF if necessary)
  • 1 ripe banana
  • 2 tbsp ground flax
  • ⅓ cup shredded coconut (plus extra for coating)
  • ⅓ cup chocolate chips (vegan ones if desired)

Method:

  1. Soak dates in boiling water for ~10-15 mins. Drain dates and save 3 tbsp of the water.
  2. Add the dates, water, oat flour, banana, flax, coconut and chocolate chips to a food processor and blend (since the dates will still be warm the chocolate chips will melt slightly in the batter). NOTE: the batter will be very sticky and moist but thats okay!!
  3. Roll batter into bite-sized balls and coat with shredded coconut (wet your hands before rolling to prevent the batter from sticking to your hands as much).
  4. Let the bites firm up in the fridge for at least 10 mins before enjoying. Store in an airtight container in the fridge.
