Oat Peanut Butter Cookies

Cookies have always been my favourite dessert, and I love making many recipes for cookies as I’m continuously looking for the best cookies recipe. Of all types of cookies, chocolate chip are my all-time favourite, but I wanted to mix it up a bit. I wanted a simple recipe that tasted delicious and satisfied my sweet tooth. And the recipe here is exactly that!

These cookies have protein from the peanut butter and dietary fibre from the oats which both help you feel full for longer! These cookies would taste great with added nuts such as almonds or walnuts. Nuts would add healthy fats and add an extra crunch to the cookies! I like having these cookies for dessert or even as a snack in the afternoon.

When baking these cookies, they don’t spread much at all, so you can fit many on one baking tray. This recipe makes about 12 cookies, depending on the size of cookies you want to make.

Ingredients:

  • ½ cup of peanut butter
  • ¼ cup of syrup
  • 1 egg
  • 1 teaspoon of vanilla
  • ½ teaspoon of salt
  • ½ teaspoon of baking soda
  • 1 ⅔ cups of whole oats
  • ⅓ cup of coarsely chopped dark chocolate chunks

Recipe:

  1. Preheat oven to 350 degrees Fahrenheit
  2. In a large bowl mix peanut butter, syrup, egg and vanilla.
  3. Add the salt, baking soda, and oats and mix well
  4. Add chocolate chunks and mix
  5. Line a baking sheet with parchment paper and place cookie dough balls on the tray
  6. Place in the oven for 10-13 minutes.
  7. Remove from the oven and enjoy!
