Pumpkin Pie Chocolate Chip Cookies
Happy first day of Fall! In honour of autumn, try these Pumpkin Pie Chocolate Chip Cookies – they are sure to be a crowd pleaser at your next potluck! Ingredients:
- 1 cup all-purpose flour
- ½ cup pumpkin puree
- ½ cup brown sugar
- ¼ cup melted coconut oil
- 1 tbsp unsweetened apple sauce
- ½ tbsp vanilla extract
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- 1 tsp cinnamon
- ⅛ tsp cloves
- ⅛ tsp ginger
- ⅛ tsp allspice
- 1 cup chocolate chips
Recipe:
- Preheat oven to 350 F/180 C
- In a large mixing bowl combine pumpkin puree, brown sugar, coconut oil, and apple sauce, vanilla extract
- In a medium mixing bowl combine flour, baking powder, baking soda, salt, and all spices
- Fold the dry ingredients into the wet ingredients and mix till thoroughly combined
- Fold in chocolate chips
- Let the dough sit for 5-10 minutes to rest and then divide the dough up on a lined baking sheet
- Bake for 10-12 minutes, let cool – enjoy!
