Southwest Veggie Mix

This is a quick, delicious and nutritious veggie mix that you can prepare ahead of time and pull out of the fridge to add to dishes throughout the week! We love adding it to omelettes, quesadillas and even just eating it on its own. This recipe uses one of our favourite pantry staples BLACK BEANS, which are a great source of plant protein, fiber and magnesium! Ingredients:

  • 1 14oz can of black beans, rinsed and drained
  • 1 cup of corn
  • 1 large bell pepper, diced
  • 1/3 cup red onion, diced
  • 1/3 cup fresh cilantro, chopped
  • 2 tsp cumin
  • pinch of salt
  • Optional: the juice from half a lime

Recipe:

  1. Mix all ingredients in a bowl.
  2. Store in an airtight container in the fridge.
  3. Add to omelettes, wraps and salads throughout the week.
