Sweet & Savoury Yam Toast

If you are bored with your usual breakfast and have a little extra time in the morning then we highly recommend this sweet and savoury yam toast! We have seen this yam toast trend on Instagram before but never really understood the hype. However, we are definitely on board now that we have tried it. Yams are one of our favourite vegetables to cook with because they are so versatile and delicious but did you know that they are also packed with nutrients? Not only are they a good source of fibre but they are also loaded with important nutrients like vitamin C and potassium. When paired with a source of fat and protein like these sweet and savoury toppings, you have got yourself a delicious breakfast that will help fuel the rest of your day and keep you feeling satisfied!

Ingredients:

  • 2 large slices of yam (around ½ an inch thick)
  • 1 tsp olive oil
  • ½ an avocado, mashed
  • 1 tbsp peanut butter
  • 1 egg
  • 1 tsp butter
  • ½ a banana, sliced
  • Drizzle of honey
  • Salt + pepper, to taste
  • Sprinkle of cinnamon

Method:

  1. Add the yam slices to a lined baking tray and drizzle with olive oil. Roast yams for 20-30 minutes (depending on the thickness of the yams) at 425 F.
  2. Add mashed avocado to one of the cooked yams and spread the peanut butter on the other yam.
  3. To a frying pan on medium heat add the butter and cook the egg to your liking. Add the cooked egg on top of the avocado yam. Top with salt and pepper.
  4. Add the sliced banana to the peanut butter yam. Drizzle with honey and top with a sprinkle of cinnamon.
