VEGAN Black Bean and Sweet Potato Burgers

Are you team hot dog or team hamburger?

I’m definitely team hamburger. I have always loved hamburgers, especially the ones my dad makes at home. But since becoming vegetarian, I haven’t found a veggie burger that satisfies me quite like my dad’s burgers did. Until now! This recipe is so delicious, easy to make, and is perfect for burger lovers like me! Whether you choose a lettuce bun, gluten-free bun, or no bun at all, this patty will taste delicious.

This recipe is loaded with nutrients such as carbs and fibre from the black beans and sweet potatoes. Sweet potatoes are also loaded with vitamin C and vitamin A, which are important for healthy vision, and magnesium which supports muscle function. On top of all those nutrients you’ll be consuming when you take a bite of these veggie burger patties, you’ll also be enjoying the delicious flavour that comes along with it!

You can customize these burgers by adding different spices such as paprika, cumin, cilantro, rosemary, thyme, and fresh basil. Or try adding your favourite toppings such as cheese, tomatoes, lettuce, or pickles to customize your very own perfect burger. One thing that I love to add to these burgers is spicy mayonnaise, which I make by mixing 2 tablespoons of mayonnaise and one tablespoon of sriracha. Feel free to add as much sriracha as you like depending on how much spice you like. But if spice is not your thing, just add a dab of plain mayonnaise. Also if you want to keep the recipe vegan, substitute mayonnaise for vegan mayo!

Let’s get into the recipe; Here’s what you need:

Ingredients:

  • One medium sized sweet potato
  • One can (about 300 mL) of black beans
  • ½ cup of corn (frozen or canned)
  • ½ teaspoon of garlic powder
  • ½ teaspoon of chilli powder
  • ¼ teaspoon of onion powder
  • 1 tablespoon of olive oil

Directions:

  1. Bring a pot of salted water to a boil
  2. Peel the sweet potato and cut it into large pieces
  3. Boil the sweet potato until tender (make sure you are able to easily stab them with a fork) strain the water and place them in a bowl
  4. Strain and rinse the black beans and corn
  5. Add the black beans to the bowl of sweet potatoes and mash them using a whisk or potato masher until no chunks are left
  6. Add the corn and all spices (including any spices you want to use to customize your burger) to the bowl
  7. Fold together with a spatula and place in the fridge for about 20 minutes.
  8. Remove from the fridge and shape the mixture into balls and flatten into a patty shape
  9. Add one tablespoon of olive oil to a frying pan and cook each patty until each side is crispy (cook to your liking)
  10. Remove from the stove, add your favourite burger topping on a whole wheat bun (or bun of choice) and enjoy!

This recipe makes about four burger patties depending on the size of your sweet potato. You can store the patty mixture in the fridge for about a week, or pre-make and store in the freezer! Enjoy!
