Vegan, No-Bake Energy Bites

These energy bites are the perfect on-the-go snack because they are packed with protein and fibre to keep you feeling full for longer. They make a great mid-afternoon pick me up at work or after school, plus you can get your children involved in making them! We make these energy bites a little different every time, so we encourage you to get creative and swap out ingredients to change up the flavour! P.S. This recipe is Rooney-approved (that adorable dog you see in the photos)!

Ingredients

  • 3/4 cup dates, soaked in hot water for 20 minutes
  • 1/2 cup roasted almonds
  • 3/4 cup roasted cashews
  • 2 tbsp natural peanut butter
  • 2/3 cup quick oats
  • 1/4 cup cacao powder
  • 1⁄2 cup chocolate chips
  • Dash of salt

Recipe

  1. Line a baking sheet with parchment paper
  2. Add soaked dates to food processor. Pulse.
  3. Add almonds, cashews, and peanut butter. Pulse until well combined
  4. Add oats, cacao powder, and chocolate chips, and pulse again until well-combined
  5. Form dough into balls, and chill in fridge for 30 minutes.
  6. Store in airtight container in fridge or freezer. Enjoy!
