Vegan, No-Bake Energy Bites
These energy bites are the perfect on-the-go snack because they are packed with protein and fibre to keep you feeling full for longer. They make a great mid-afternoon pick me up at work or after school, plus you can get your children involved in making them! We make these energy bites a little different every time, so we encourage you to get creative and swap out ingredients to change up the flavour! P.S. This recipe is Rooney-approved (that adorable dog you see in the photos)!

Ingredients
- 3/4 cup dates, soaked in hot water for 20 minutes
- 1/2 cup roasted almonds
- 3/4 cup roasted cashews
- 2 tbsp natural peanut butter
- 2/3 cup quick oats
- 1/4 cup cacao powder
- 1⁄2 cup chocolate chips
- Dash of salt
Recipe
- Line a baking sheet with parchment paper
- Add soaked dates to food processor. Pulse.
- Add almonds, cashews, and peanut butter. Pulse until well combined
- Add oats, cacao powder, and chocolate chips, and pulse again until well-combined
- Form dough into balls, and chill in fridge for 30 minutes.
- Store in airtight container in fridge or freezer. Enjoy!
