Veggie Cucumber Rolls
Cucumber veggie rolls are a fun take on traditional sushi-style rolls. Except instead of seaweed and rice holding all the delicious filling inside the roll, it’s a fresh slice of cucumber. I love this recipe because it’s a great way to get some veggies in your diet, and makes a delicious snack. It also could be a fun and interactive way to get kids into the kitchen because they are super easy to make and you can add any fillings you like!
With all the veggies in these cucumber rolls, it’s an effortless way to get lots of fibre, vitamins, minerals, antioxidants and phytochemicals. There are also healthy fats in the avocado if you decide to add it! They’re perfect for an afternoon snack or even on the side of the main dish for lunch or dinner. Try adding some sesame seeds on top to add some extra flavour and saturated fats, iron, and dietary fibre!
When cutting the cucumber strips it can be tricky. I suggest cutting the cucumber in thin slices from one tip of the cucumber to the other and holding the cucumber with a fork to avoid the risk of cutting your fingers (although this is not necessary). Take your time when cutting the strip. They do not need to be perfect or all the same size. As long as they are thin enough that they can be rolled that’s all that matters! You can also choose to add protein such as smoked salmon, tofu, or whatever you usually love inside your sushi rolls.
Ingredients:
- Cucumber
- Avocado
- Carrot
- Red pepper
- Cream cheese
- Any other veggies or protein of choice
Recipe:
- Cut thin, long strips of cucumber and dry them with a paper towel
- Add a layer of cream cheese
- Cut thin strips of your choice of veggies and add them on top of the cream cheese
- Roll your cucumber strip and push a toothpick or skewer through the centre to help hold them together
- Enjoy!
