White Chocolate Cranberry Oat Cookies

Ingredients:

  • 1 1/4 cup oat flour
  • 1/4 tsp baking soda
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1/4 cup dried cranberries
  • 1/4 cup white chocolate chips
  • 1/8 tsp cinnamon
  • 1/8 tsp salt

Recipe:

  1. Preheat the oven to 350F.
  2. In a large bowl, combine the oat flour, baking soda, cinnamon, salt, dried cranberries and white chocolate chips
  3. In another bowl, mix together the maple syrup, coconut oil and egg.
  4. Fold the wet mixture into the dry mixture.
  5. Form the cookies by using 2 heaping tablespoons of dough for each cookie to make around 10-12 cookies total. Leave a 1inch space in between each cookie as these spread a lot during baking.
  6. Bake for 10 minutes or until golden brown.
